Ingredients

  • 7 salmon fillets (4–5 oz each)
  • 3 large sweet potatoes, cubed
  • 1 medium butternut squash, peeled & cubed
  • 2 Italian squash (zucchini), sliced
  • 1 lb mushrooms, sliced
  • 1 bunch asparagus, trimmed
  • Seasoning & Oil
  • 4 tbsp olive oil
  • 1 ½ tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika (optional)
  • 1 tbsp garlic powder

Directions

  1. Preheat the Aroma Roaster Oven to 375°F.
  2. Toss all vegetables (sweet potato, butternut squash, zucchini, mushrooms, and asparagus) with olive oil, salt, and black pepper. Spread evenly in the roaster oven inner pan.
  3. Roast vegetables for 30 minutes, until mostly tender.
  4. Season salmon, then place the fillets on stainless steel rack and place it on top of the roasted vegetables.
  5. Close the lid roast for 20 minutes, until salmon flakes easily.
  6. Cool slightly and divide into 7 meal-prep containers.
