Christmas Tree Potato Salad

Ingredients

  • 3 cups potatoes, peeled and diced
  • ½ cup carrots, diced
  • 1 cup ham, diced
  • ½ cup mayonnaise
  • ½ cup plain yogurt
  • Salt and black pepper, to taste
  • Cucumber slices (for Christmas tree decoration)

Directions

  1. Add water to the rice cooker pot. Place diced potatoes into the steam tray.
  2. Insert the steam tray into the rice cooker, close the lid, and cook until potatoes are fork-tender, about 20 minutes.
  3. Carefully remove the steam tray and let the potatoes cool slightly.
  4. Transfer to a bowl, add diced ham, diced carrot mayonnaise, and yogurt.
  5. Season with salt and black pepper, mix gently, then shape into a Christmas tree.
  6. Decorate your “tree” by inserting cucumber slices into the sides like branches, and place a carrot-cut star at the top as the tree topper.
