Brussels Sprouts with Honeyed Pistachios x Homemade

Ingredients

For the Brussels Sprouts:

  • 1 lb brussels sprouts, trimmed and halved
  • 1/4 cup water

For the Pistachio Relish:

  • 1/3 cup shallot, finely diced
  • 1/4 teaspoon salt
  • 2 tbsp champagne vinegar
  • 2 tsp honey
  • 1 tsp ground black pepper
  • 2 tbsp olive oil
  • 1/3 cup pistachios, roughly chopped

For Serving:

  • 1/4 cup pomegranate arils

Directions

  1. In a small bowl, combine champagne vinegar, minced shallot, and salt. Let sit for 5+ minutes.
  2. Add water to rice cooker and press COOK. When steaming, add Brussels sprouts to steam tray and replace lid. Cook for 6 minutes, stirring halfway through, then remove.
  3. Stir in honey, pepper, oil, and pistachios with pickled shallots, then toss to coat over steamed Brussels sprouts.
  4. Transfer to a serving plate and top with pomegranate arils.
