Rice Cooker Zesty Rhubarb Cake x Homemade

Ingredients

  • 1 1/2 cup flour
  • 3/4 tsp baking soda
  • 1 tsp kosher salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 3/4 cup sugar
  • 3/4 cup vegetable oil
  • 2 eggs
  • 1/2 tsp vanilla
  • 1 tsp orange zest
  • 2 cups diced rhubarb
  • 8 oz crème fraîche, for serving

Directions

  1. In a medium bowl, combine flour, baking soda, salt, cinnamon, nutmeg, and sugar.
  2. Add oil, eggs, vanilla, and orange zest, then stir until just combined. Fold in rhubarb. (Batter will be thick.)
  3. Spray rice cooker inner pot with baking spray and add cake batter. Level with spatula, then close lid and press CAKE.
  4. After cycle completes, lift out inner pot and allow to cool for 10 minutes.
  5. Unmold cake and place on a wire rack to cool completely.
  6. Transfer to serving plate, slice, and top with dollop of crème fraîche.
