Easy Risotto Carbonara x Homemade

Ingredients

  • 1 tbsp olive oil
  • 1/2 cup diced pancetta
  • 2/3 cup shallot, finely chopped
  • 1 1/4 cup vegetable broth
  • 3/4 cup dry white wine
  • 1 cup arborio rice
  • 1 cup frozen peas, thawed
  • 1 lemon zest and juice
  • 1/2 cup parmesan cheese, grated
  • 1/3 cup heavy cream
  • salt and pepper, to taste
  • parsley (for garnish)

Directions

  1. Turn on Sauté-then-Simmer STS® function and heat olive oil to shimmering.
  2. Sauté pancetta and shallots with pinch of salt and pepper, stirring occasionally until pancetta is lightly browned.
  3. Add vegetable broth, white wine, arborio rice, and pinch of salt. Close lid and press Risotto button.
  4. When rice cooker is done, stir in peas, lemon zest, lemon juice, parmesan, and heavy cream.
  5. Transfer to serving dish and garnish with fresh parsley, if desired.
